Baron de Sigognac VSOP Armagnac is aged for a long time in old and new wood. This adds a powerful complexity on the nose, balanced by floral plum notes. Great balance in the mouth, it's endowed with a smooth vanilla flavour and notes of dried, almost crystallised fruits. Made using grapes grown on sandy soils in the heart of the Bas Armagnac. This Armagnac spends six months in new oak followed by a seven year period in old oak to develop its rich flavours. The domaine is almost unique in the region as all its production is distilled into Armagnac instead of wine. Around 50 to 60 casks of new spirit are produced annually using just one still, a short column design which is almost 100 years old.
The wine is distilled on its lees, and drawn off at 55-58%, depending on the harvest. Distillation is continuous through day and night and manually controlled to account for temperature and humidity changes. Each year's production is aged on its own and then blended when bottled. Vintage spirits are bottled unblended. |
