El Ron Prohibido, translated as 'the forbidden rum', is a unique premium rum from Mexico. It's produced in a traditional 12 year solera process with a unique combination of column still rums. In the 17th century, Ron Prohibido was shipped in used sweet wine barrels to Spain, where the distinctive sweet and bitter taste it acquired during the voyage was much appreciated. So much s,o that local producers in Spain persuaded King Felipe V to ban it, hence it became 'prohibido' - the forbidden rum. Fermentation take places in partially used raisin wine barrels, before the resulting 'mosto' is distilled in column stills. Ageing of the rum occurs in a solera system, so that new batches of rum are mixed with older ones and the combination develops a completely unique sensory profile. Now, over 300 years later, this delicious rum is now available in the UK. |
