La Penca
Mezcal has historically been known as "the cognac of Mexico" for its exquisite softness. La Penca mezcal, which takes its name from the leaves, reminiscent of swords, surrounding the agave plant from which it is produced. Differing from it's close cousin tequila, the maguey agave pinas are grilled over a pit of hot rocks instead of slow-baking them which caramelises the sugars imparting a smokey character. La Penca is bottled with the traditional maguey worm, sometimes found inside the agave plant itself. |
