Pink Pepper Gin is so named for its signature botanical, the peppercorns which grown on the Brazilian pepper tree. The peppers join juniper, cardamom, cinnamon, honey, vanilla and tonka beans in the recipe along with two other secret ingredients. Each ingredient is distilled separately before blending except for the vanilla and tonka beans, which are infused after distillation. On the nose, Pink Pepper Gin has prominent citrus notes with a delicate fusion of spicy and sweet aromas. To taste, herbal juniper notes underpin the complex sweet and spicy flavours. The tonka bean however is the flavour which will linger the longest. Pink Pepper Gin is designed to taste differently firstly depending on how old it is, but also on the temperature at which it is served, a property associated with the tonka bean. Audemus Spirits suggest that over time the pink pepper, juniper and cardamom will begin to give way to more prominent vanilla, honey and tonka bean flavours, and that served cold, the spicier elements are more prominent with sweeter flavours appearing when served warmer.
