Tequila is famously the national spirit of Mexico, created by Spanish conquistadors, taking inspiration from the agave drinks of the native Aztec people. Tequila is produced exclusively in the state of Jalisco from the blue agave plant. The traditional Mexican way to drink Tequila is neat without the salt and lime which is more of an international phenomenon, and many of the best aged (or "anejo") Tequilas can be appreciated like a fine whisky or cognac. Tequila has become an extremely popular cocktail ingredient though and should find itself an essential part of any bar.
