Magnum red, 1.5L bottle. Thelema Cabernet Sauvignon is a forceful South African red. It's full intense berry fruit including black cherry, blackcurrant and smoky coffee and chocolate flavours on a background of warm, toasty oak, freshened by a touch of mint. A Smooth and silky wine.
The grapes for Thelema Cabernet Sauvignon are sourced from selected parcels planted between 1998 and 1999 in Hutton soils (decomposed granite) at a density of 3200 vines per ha. Vineyard practices include vertical hedge trellising, pruning to 2 bud spurs every 15cm and supplementary drip irrigation.
The grapes are hand harvested. The bunches are de-stalked and the berries hand sorted before crushing and fermenting in stainless steel tanks. Pump overs are performed for 6 days before a further maceration of 5 days. After pressing, the wine is then racked to 50% new French oak barrels for malo-lactic fermentation and 20 months ageing.
